As we mentioned in a previous post on this blog , açai is a very popular fruit in Brazil that we both happen to like a lot. Since it is so hot in Goiânia, we are constantly craving for ice cream, and while açai ice cream is sold on every corner, it tends to be too sweet for us because it contains lots of added sugars. Therefore, we decided to make our own sugar-free açai sorbet. Our Brazilian host seemed to really like it, as did we. So, we decided to share the recipe here, in case you are in a region where açai is available and affordable. We hope you enjoy this refreshing sorbet! Ingredients (serves two): – 2 packets of frozen açai pulp (100g each) – 4 ripe apple-bananas (mini bananas, frozen for about 4-8 hours without peel) – 1 ripe apple-banana – 1 tablespoon of chia seeds – ½ to 1 cup water, depending on preference Toppings (optional): – Coconut flakes – Cacao – Chopped (dried) fruits Preparation method: Before making the sorbet, add four really ripened apple-bananas (peeled) in the freezer for about 4-8 hours. Once the bananas are ready, put them into a smoothie maker together with the açai pulp and half a cup of water, and blend everything until the mixture gets smooth (you can add more water if you prefer a more liquid consistency). Alternatively, you can add these ingredients into a tall container (jug) and use a hand blender. After mixing the ingredients, add a table spoon of chia seeds and stir it in. Pour the mixture into tall drinking glasses or dessert bowls and slice the remaining banana to top the sorbets. It can also be nice to add any other toppings you prefer. Topped with guava

9/11/15 It is inevitable: there are some famous (or infamous: the awesome video game) sights in a country you have heard about and have to see: the Great Wall of China; the Pyramid of Egypt; the Hanging Garden of Babylon (wait, I think that got destroyed); this awesome blog. Sometimes they live up to their names, and sometimes you are left with a sense of disappointment. The Chinese had a saying: seeing the face is not comparable to hearing the name (or vice versa). This far, I have been impressed by most of the sights: Salar de Uyuni, Machu Picchu, Ciudad Perdida. Wheb I got the Brazil, surprisingly, everyone told me the most amazing thing about Rio is the beach. Christ the redeemer and sugarloaf mountain actually came pretty low on the list: not because they are not great, but because everyone know every tourist will visit these places. I woke up today to….rain. There is a cold front passing through Rio and rain is forecasted for the next five days. This is bad, since I really wanted to do some wandering around the city (well, I could do it in the rain, but I am recovering from a cold too), and try paragliding. If this weather persist, I really need a good and long conversation with the weather diety. I ate a quick breakfast, packed my day bag for the city tour. They picked me up relatively promptly at 10:30am (only 15 minutes late), and we were off to the national forest: Sao Conrando. The forest is a temperate one, with good viewpoints, a waterfall, some monkeys with great hairdo (seriously, they all have the hipster tuff of hair on the very top, popularized by Justin Timberlake), and lots of trees. The guide also mentioned the importance of Acai berry (it is a super fruit! In danger, it wears a brief on the outside and fly off): a super fruit very popular in Brazil, but most be frozen immediately after leaving the tree. It is sold on many fruit stands in the area, and usually comes in a jelly/smoothie form (like phlegm texture? Yeah, I like making horas third grader jokes). We walked around the area, taking lots of pictures while asking lots of questions (symbiotic relationships, parasites, carbon cycle, etc.). Actually, our guide was the one that asked all these questions. He ended his lecture by saying all the answer and cute to diseases are going in nature (ok, fair enough), and that he knows a mixture that can force cancer out of people in 30 days (hmmm), but cannot reveal the mixture ingredient because the big companies will kill him. I was instantly interested, but he never actually talked about it again throughout the trip. After the “jungle”, we visited the main site: Christ the Redemmer. Built in 1937 to 1942 (wait, starting Second World War period?), the whole statue was built in Brazil except the head and the hands (so, Jesus was constructed in many places! Just like the real Jesus: immaculate conception!). It is the highest structure in Rio (mostly because it is built on the mountain top…), and is one of the most visited place on Brazil. While there are many ways up to see Jesus (heh), we took the easiest route: bus to the train station, took a shuttle, and walked up. It was a magnificent location: a 360 degree viewpoint of Rio. Above, Jesus with arms outstretched, looking like he is capable of lifting off. Below, it was a mass of tourists, all trying to pose like Jesus (mostly looking like they were in physical rehab). I took some photos, assisted in taking other people’s photo, and then fled the area. Our group eventually regrouped (we all actually looked for the guide to leave earlier), went to a very late lunch (3:30-4m), before heading to the famous Selaron staircase. Escadaria Saron is a public staircase adorned with colorful tiles by artist Jorge Selaron. It is a very beautiful tiled staircase in a not so safe neighborhood. Built from 1990 to 2013, the artist was originally mocked for his choice of colors and had to sell off his paintings to finance this project. All steps are covered in tiles, ceramics and mirrors, and is a sight to behold. I am actually more impressed by the stairs than the statue, since it really showed how an artist can transform a neighborhood obsession. The day ended pretty tamely, and I managed to squeeze a run in (which made me cough like I was going to expire any minute. I think some passerbys were severely alarmed), before heading for a light dinner of: Acai berry with fruits. As I sit typing in a cafe (aptly named cafein), I have to ask myself: is visiting Jesus (the statue, not the real person) worth it? It is a lot of money spent on seeing a statue, one that is famous because it is famous. While the views are very nice, it did not offer the same emotional impact as other places I have seen. Am I just jaded after so many months on traveling (err…only 5)? But the sight and history of the Saleron steps actually renewed my faith in myself (weirdly). I am still the same guy, who is impressed by humans endeavors. One man’s obsession that led to a transformation of a neighborhood impress me apt more than a giant statue. People would often bring acai with them while fishing in the river, sprinkling it with toasted cassava. Through the years, there has been a growing global demand for the acai berries. In a blink of an eye, the unassuming berry become a global superfood. In recent years, it has taken the world by storm and becomes the much-hyped food. She tells about taking acai juice when she has hangover. “The pulp and skin of acai fruit are rich in anthocyanins (ACNs), proanthocyanidins (PACs) and fatty acids. It is marketed as a dietary supplement for lowering cholesterol, cardiovascular disease, allergies, and for cancer treatment. In vitro and in vivo studies have shown that acai has anti-inflammatory, antioxidant, pro-apoptotic, antitumorigenic, and athero-protective effects. An acai extract inhibited beta-amyloid inhibition, which suggests it may also have neuroprotective activity. Further, nasal acai polysaccharides were found to potentiate innate immunity against pulmonary infections in mice; and oral administration of acai extracts prevented the development of exercise intolerance, cardiac hypertrophy and dysfunction in rats with myocardial infarction. Some laboratory studies suggest acai may reduce cholesterol, prevent diseases of the heart and blood vessels, and cause programmed cell death in leukemia cells. Due to its antioxidant effects, acai may interfere with the actions of certain chemotherapy drugs. Consumption of contaminated acai fruit with insects carrying Trypanosoma cruzii, a protozoan that causes Chagas disease, resulted in 178 cases of acute disease. However, studies in humans are needed to confirm these effects. While proponents claim many health benefits of acai, research on acai berries is limited, and health claims haven’t been proved.” (Source: Memorial Sloan Kettering Cancer Center) Just to be sure, check with your doctor before consuming, especially for people taking medications for high cholesterol or diabetes and those with kidney disease, as large amounts of acai might affect the management of these conditions. Also, it is best to let your doctor know that you are taking acai if you’re scheduled to have a magnetic resonance imaging (MRI) test. Very large doses of acai might affect the results of MRI scans. But don’t worry. Acai is practically safe to consume, as long as you are not allergic to it. It can be eaten raw, in tablet form, in beverages (juices, smoothies, energy drink) or in other food products (jelly, ice cream). With Organique Acai Premium Blend, you can drink it as it is. (Cathy recommends 30 to 60ml per day, depending on the health conditions of the person). Or you can try and combine it with other food. Here are some recipes you can try: GRILLED CHICKEN WRAP with mayo garlic and Acai Berry sauce (Recipe by Chef Tenten Casasola) INGREDIENTS: 6 large pieces chicken breast 1 bunch lettuce 1 piece cucumber 4 pieces tomato 2 pieces onion 6 pieces tortilla wrap 4 pieces garlic olive oil For the sauce: 1 cup mayo (you can also use sour cream) ¼ cup Acai Berry Juice 2 pieces garlic cilantro lemon juice, to taste salt and pepper, to taste PREPARATION: Wash and prepare the vegetables. Cut the cucumbers (with skin) to julienne. Quarter the tomatoes and remove the seeds. Then slice the quartered tomatoes into strips. Slice the onions thinly. PROCEDURE: In a bowl, add chicken breast, oil and garlic. Season with salt and pepper. Set aside for at least 5 mins. Grill the chicken breast until tender. Slice the grilled chicken into one-inch thick strips. In a separate (smaller) bowl, add the ingredients for the sauce. Season to taste and set aside. To assemble the wrap: Spread the sauce evenly over the tortilla wrap. Layer the vegetables and chicken. Roll the tortilla wrap tightly. Cut in half. Makes 6 servings. AMERICAN SALAD with Acai Berry Vinaigrette (Recipe by Elaine Grace Gatdula, RND) INGREDIENTS: For Olive Oil Preparation: ½ cup olive oil (pomace) 1 tbsp garlic, minced 2 tsp rosemary For Dressing: 2/3 cup Acai Berry Juice ¼ cup apple cider vinegar 2 tbsp corn syrup For Salad: 450grams romaine lettuce 2 pieces medium-sized apple, sliced 2 pieces carrots, julienned ½ cup croutons ¼ cup pili nuts, crushed (you can use other kinds of nuts) PROCEDURE: Heat olive oil in a pan. Saute garlic and rosemary until brown. Remove the garlic and rosemary out using a strainer. Let the olive oil cool. In a bowl, combine Acai Berry Juice, apple cider vinegar, corn syrup and olive oil. Mix them well until smooth. Transfer the mixture in a container and keep inside the chiller. In a salad bowl, mix lettuce, apples and carrots. Top the salad with croutons and pili nuts. Serve with acai berry vinaigrette on the side. Or you can drizzle the vinaigrette on the salad before serving. Makes 5 servings. GRILLED TILAPIA with mango and Acai Berry salsa INGREDIENTS 2 pieces tilapia fillet For marinade: 1/3 cup olive oil 2 tbsp Acai Berry Juice 1 tbsp parsley, minced 1 tbsp garlic, minced 1 tsp basil ½ tsp salt 1 tsp pepper For salsa: 1 piece large ripe mango, diced 1 piece red bell pepper, diced 2 tbsp onion, minced 1 tbsp fresh cilantro, chopped 2 tbsp lime juice 1 tbsp Acai Berry Juice salt and pepper to taste PROCEDURE: Mix all the ingredients for the marinade. Pour the marinade to the tilapia fillet. Marinate in the refrigerator for an hour. Prepare the salsa. Combine all the ingredients for the salsa (mango, red bell pepper, onion, cilantro, lime juice, Acai Berry Juice, salt and pepper) in a bowl. Refrigerate until ready to serve. Grill the tilapia over medium-high heat in an outdoor griller. Lightly oil the grate to keep the tilapia from sticking. Cook well. Serve the fillet with the salsa on top. Makes 2 servings. ACAI BERRY SMOOTHIE INGREDIENTS: 200 grams strawberry 200 grams grapes 1 cup Acai Berry Juice 1 cup yogurt 3 cups ice ½ cup corn syrup (you can also use honey or sugar) PROCEDURE: Mix all the ingredients in a blender. Set aside some strawberries and grapes for garnishing. Blend until smooth. Add water if necessary. You can make this by batches. Pour the mixture in glasses. Garnish with slice grapes and strawberries.
