East Coast Australia – Part 2

Our journey has continued further down the coast and I have experienced more nourishing food and experiences at new destinations. Since leaving Airlie Beach we have done a 3 day camping trip on Fraser Island before travelling down to Noosa, through the Sunshine Coast, Brisbane and finally Sydney which is where I will now be staying and finding work! I have thoroughly loved my time travelling and it’s on to an exciting new chapter for me now. Fraser Island: This trip consisted of 3 days solidly in the outdoors, full of activity and fun. The beautiful Lake Mckenzie is surrounded by pure silica sand which I exfoliated my whole body. My skin will have inevitably dried in the sun yet this exfoliation, followed later by a lathering in aloe vera gel, really softened and rehydrated it. This gel feels so lovely on the skin and it’s so gentle and healing. Sunspace Cafe (Doonan): After our camping trip, we travelled down to Noosa for a couple of nights and totally loved it. Doonan is a 10 minute drive from Noosa and is worth the visit for Sunspace Cafe which is situated in gardens growing their own fruit, veg and herbs. These gardens also host gardening classes, teaching people how to replicate something similar in their own garden, encouraging a locally sustainable lifestyle. The food is made with quality ingredients prepared in ways to optimise nutritional properties. I had the homemade sprouted granola with coconut yogurt and seasonal fruit. This generous portion (pictured top right) tasted delicious and was clearly artistically presented. Kunara (Caloundra): We then travelled down through the Sunshine Coast and stayed in Caloundra. Kunara is an organic supermarket there offering a huge range of produce. They have a pick ‘n’ mix style for things like grains, nuts, seeds, dried fruit, chocolate and flours, as well as aisles full of dried food such as pasta, crisps, crackers, nut butters and so much more. It’s great because you can get so much ‘conventional’ food but made in a much healthier way than those that lots of us are more used to. For example, the crisps may be made from gluten free grains such as quinoa and buckwheat and flavoured with more natural sauces such as tamari and sea salt. These much less processed alternatives are so much fresher and better for our bodies. They also taste amazing! Next to the shop there is a cafe offering melas, smoothies, hot drinks and lots of drool-worthy sweat treats. I enjoyed a hot cacao made with almond milk before leaving this wonderful place behind. Greenhouse cafe (Caloundra): I have followed this cafe on Instagram for so long and actually had no idea how close we were to it. It was only when a friend, local to the area, suggested going there and the name really rang a bell that I had a quick search on Instagram and found it was one of my favourite pages! I was really excited to get to visit this vegetarian cafe and it was just as lovely as it looks on camera. The cafe has painted wooden chairs and pretty flowers; it had a light, fresh feel, perfect for the food it serves. I ordered their special which was a tofu burger. I don’t usually eat tofu but it was nice to try and the burger was so tasty and filling. This was just the meal I needed before our last greyhound bus taking us down to Brisbane… Kiss the Berry (Brisbane): On the evening of our first day in Brisbane it was forecast to rain so we decided to enjoy a much needed night of rest. The next day was glorious sunshine and we had such a fun day. First, we went to Eat Street markets which are on on a Friday and Saturday night as well as a Sunday from 10-3. The food looked so tasty but wasn’t really breakfast food so we saved ourselves for South Bank which we knew was full of cafes and restaurants. We got a ferry there which was a great experience as it was like getting a mini tour of Brisbane and got to come into the city by water. We got off at the stop for South Bank and Kiss the Berry was hardly a 5 minute walk away. We just followed the river and the tubs of Acai that we started seeing. We both picked the Snickers Delight Acai bowl and picked up a blanket to enjoy a picnic on the grass. It tasted amazing; I’m going to make the most of all the Acai bowls available in Oz because they are so good for you and taste like a big bowl of ice cream! In fact, the berry is considered to be one of the most powerful and nutritious super food on the planet! It’s a powerful antioxidant and is high in essential fatty acids while somehow being low in sugar, therefore it makes an amazing breakfast (although I could probably enjoy this morning, noon and night). We ate next to the wheel of Brisbane with a man playing gorgeous music beside us (what a way to spend a morning!). We then took a ride on the wheel and had a great view of the city. We spent the rest of the day exploring the markets, following the flower entwined arches and relaxing at Sunday sessions on the green (live music by the river). Brisbane can now be added to the ever growing list of Australian towns and cities that have impressed me.

A staple food, fresh acai is often describe as somehow tarty and quite earthy. The fruits are shelled, separating the inedible seed from the pulp and purple skin. People would often bring acai with them while fishing in the river, sprinkling it with toasted cassava. Through the years, there has been a growing global demand for the acai berries. In a blink of an eye, the unassuming berry become a global superfood. In recent years, it has taken the world by storm and becomes the much-hyped food. The fat content consists of oleic acid, palmitic acid and linoleic acid. The carbohydrates include 44.2g dietary fiber. Regine Tolentino shares her experience in drinking Acai berry juice. She tells about taking acai juice when she has hangover. “The pulp and skin of acai fruit are rich in anthocyanins (ACNs), proanthocyanidins (PACs) and fatty acids. It is marketed as a dietary supplement for lowering cholesterol, cardiovascular disease, allergies, and for cancer treatment. In vitro and in vivo studies have shown that acai has anti-inflammatory, antioxidant, pro-apoptotic, antitumorigenic, and athero-protective effects. An acai extract inhibited beta-amyloid inhibition, which suggests it may also have neuroprotective activity. Further, nasal acai polysaccharides were found to potentiate innate immunity against pulmonary infections in mice; and oral administration of acai extracts prevented the development of exercise intolerance, cardiac hypertrophy and dysfunction in rats with myocardial infarction. Some laboratory studies suggest acai may reduce cholesterol, prevent diseases of the heart and blood vessels, and cause programmed cell death in leukemia cells. Due to its antioxidant effects, acai may interfere with the actions of certain chemotherapy drugs. Consumption of contaminated acai fruit with insects carrying Trypanosoma cruzii, a protozoan that causes Chagas disease, resulted in 178 cases of acute disease. However, studies in humans are needed to confirm these effects. While proponents claim many health benefits of acai, research on acai berries is limited, and health claims haven’t been proved.” (Source: Memorial Sloan Kettering Cancer Center) Just to be sure, check with your doctor before consuming, especially for people taking medications for high cholesterol or diabetes and those with kidney disease, as large amounts of acai might affect the management of these conditions. Also, it is best to let your doctor know that you are taking acai if you’re scheduled to have a magnetic resonance imaging (MRI) test. Very large doses of acai might affect the results of MRI scans. But don’t worry. Acai is practically safe to consume, as long as you are not allergic to it. It can be eaten raw, in tablet form, in beverages (juices, smoothies, energy drink) or in other food products (jelly, ice cream). With Organique Acai Premium Blend, you can drink it as it is. Cut the cucumbers (with skin) to julienne. Quarter the tomatoes and remove the seeds. Then slice the quartered tomatoes into strips. Slice the onions thinly. PROCEDURE: In a bowl, add chicken breast, oil and garlic. Season with salt and pepper. Set aside for at least 5 mins. Grill the chicken breast until tender. Slice the grilled chicken into one-inch thick strips. In a separate (smaller) bowl, add the ingredients for the sauce. Season to taste and set aside. To assemble the wrap: Spread the sauce evenly over the tortilla wrap. Layer the vegetables and chicken. Roll the tortilla wrap tightly. Cut in half. Makes 6 servings. AMERICAN SALAD with Acai Berry Vinaigrette (Recipe by Elaine Grace Gatdula, RND) INGREDIENTS: For Olive Oil Preparation: ½ cup olive oil (pomace) 1 tbsp garlic, minced 2 tsp rosemary For Dressing: 2/3 cup Acai Berry Juice ¼ cup apple cider vinegar 2 tbsp corn syrup For Salad: 450grams romaine lettuce 2 pieces medium-sized apple, sliced 2 pieces carrots, julienned ½ cup croutons ¼ cup pili nuts, crushed (you can use other kinds of nuts) PROCEDURE: Heat olive oil in a pan. Saute garlic and rosemary until brown. Remove the garlic and rosemary out using a strainer. Let the olive oil cool. In a bowl, combine Acai Berry Juice, apple cider vinegar, corn syrup and olive oil. Mix them well until smooth. Transfer the mixture in a container and keep inside the chiller. In a salad bowl, mix lettuce, apples and carrots. Top the salad with croutons and pili nuts. Serve with acai berry vinaigrette on the side. Or you can drizzle the vinaigrette on the salad before serving. Makes 5 servings. GRILLED TILAPIA with mango and Acai Berry salsa INGREDIENTS 2 pieces tilapia fillet For marinade: 1/3 cup olive oil 2 tbsp Acai Berry Juice 1 tbsp parsley, minced 1 tbsp garlic, minced 1 tsp basil ½ tsp salt 1 tsp pepper For salsa: 1 piece large ripe mango, diced 1 piece red bell pepper, diced 2 tbsp onion, minced 1 tbsp fresh cilantro, chopped 2 tbsp lime juice 1 tbsp Acai Berry Juice salt and pepper to taste PROCEDURE: Mix all the ingredients for the marinade. Pour the marinade to the tilapia fillet. Marinate in the refrigerator for an hour. Prepare the salsa. Combine all the ingredients for the salsa (mango, red bell pepper, onion, cilantro, lime juice, Acai Berry Juice, salt and pepper) in a bowl. Refrigerate until ready to serve. Grill the tilapia over medium-high heat in an outdoor griller. Lightly oil the grate to keep the tilapia from sticking. Cook well. Serve the fillet with the salsa on top. Makes 2 servings. ACAI BERRY SMOOTHIE INGREDIENTS: 200 grams strawberry 200 grams grapes 1 cup Acai Berry Juice 1 cup yogurt 3 cups ice ½ cup corn syrup (you can also use honey or sugar) PROCEDURE: Mix all the ingredients in a blender. Set aside some strawberries and grapes for garnishing. Blend until smooth. Add water if necessary. You can make this by batches. Pour the mixture in glasses. Garnish with slice grapes and strawberries.
